Brunch today was easy and amazing. Poached eggs with tomato, chickpeas, sautéed vegs, feta, scooped out of a scalding skillet with toasted pita strips. Halve the linked-to recipe if you’re making it for two. 30-40 minutes of cooking and this Israeli dish was ready (I subbed in fresh chopped basil for the other leafy things). Truly drool-worthy and it’s a one-pan cleanup! I give it a 92: it’s got a great beat and I bugged out to it.
