these are the most amazing things in the world, and jared made them this weekend.
they are little tiny pancake muffins, with chocolate chips stuffed inside. served on a plate of syrup.
ok, here’s how i make these amazing little soft and foamy gut-busters:
preheat the oven to 350F.
mix up some pancake batter (whatever kind you like), enough to make between 9-12 regular pancakes. it works best if it’s just slightly on the runny side (if you’re using a “complete” mix: 1 cu. mix, 3/4 cu. water).
take your non-stick mini-muffin pan and place a small sliver of butter at the bottom of each dimple (about 1/4 pat)
with a spoon, put a small dollop of batter in each dimple (1/2 tbsp).
place between 4-6 milk chocolate chips in each dimple.
top off the muffin with more batter (so it’s just below the top).
bake for 11 minutes, more if you want the bottoms to be golden brown (you can test for doneness with a toothpick. if it comes out clean, they’re ready).
plate, drizzle with tons of syrup.
feeds two. you’ll be amazed at how filling these little badboys are.
