i think i’m gonna make a meatloaf tonight (pictured above is one i made a while back).

veal, beef, and pork, bacon wrapped. stuffed with peppers of all kinds (sweets and hots) and scallions and sourdough crumbs and gruyere or fontina and a sprinkle of minced scallops or lobster sauteed in butter and flanked with potatoes and slathered in tomato paste.

i’m gonna eat 2” thick slabs of this on brioche buns with ketchup all week long.
